Campfire Specialties
MARK ISLAND BEAN HOLE BEANS

The Bean Hole
Dig a pit at least 3 feet deep by 3-4 feet diameter (no small task on this island). Our pit was dug with a large buried rock making up one side. Place flat stones level on the bottom of the pit and line the sides of the pit with rocks. You will need some kind of a fireproof cover for the pit, such as a large flat stone or a steel plate. At least 4 - 6 hours before you will start cooking the beans, build a fire in the pit. You can use any wood, but hard wood or natural charcoal works the best. (The entire recipe will be found in Winnipesaukee Cuisine)
Helpful Hints: It’s a good idea to notify the Gilford Fire Department that you intend to fire up your bean hole, as you probably won’t have enough beans left after feeding the crew from Snuffer to feed your family.

Notes: Lighting the drink is much easier if you fill the pony glass with the first two ingredients and leave only enough room in the glass for the brandy to float on top. Remember to blow out the flame before drinking!
Fast-Acting Blueberry Pancakes
Wells – Mark Island
pancake or waffle mix (not the “complete” kind)
eggs
melted butter
evaporated milk
water
wild blueberries
Mix the above ingredients, blueberries last. The secret of fast-acting is small (3-4 inch) thin pancakes. Cook in a pan or on a griddle. Flip when bubbles appear. If large, high bush blueberries are used, the thin pancakes will stand off the surface and not cook properly, so “whap” each with a spatula after turning to flatten the berries.
If when cooked, any pancakes happen to have no blueberries, they may, with good wrist action and a “whoops!” be flipped high in the general direction of the table.
Scoring as follows:
0 points for landing on ground or floor
1 point for landing on the table
3 points for landing on someone’s plate
5 points for landing in a cup of coffee
Before the meal finished make sure outhouse door is unlocked.

GLAZED ASIAN SALMON

Marinade:
Dijon mustard
Brown sugar
Soy sauce
Salmon filets

HUSBAND STEALING HUCKLEBERRY PIE

*Prepare crust for 2-Crust Pie
Huckleberry Filling:
Huckleberries
sugar
flour
lemon juice
cinnamon
butter
Combine first 5 ingredients, mixing gently. Roll out 1/2 of pie dough on lightly floured surface, place in greased pie plate, add the huckleberry mixture and dot the berries with the 1 Tablespoon butter. .Roll out remaining pie dough, fold in half, with butter knife slice ½ inch air vents on top of fold, dab water on bottom lip of dough containing berries to seal as you place top dough on bottom .Crimp dough with thumb and index finger to create crust. Bake at 400* for 20 minutes, turn oven temp down to 350* and continue baking 30 to 40 minutes.
Helpful Hints: Find a good-looking guy to pick your berries. Mine was Carl Tourtellot- he and his good-natured wife Trude owned the mail dock and properties for decades. Flirt and visit a little, and if you’re lucky, you will also end up with life-long friends to treasure.
Note: Reason sugar and lemon juice vary in this recipe is because Carl didn’t like his pie too sweet… he was sweet enough.
